Cookie Holder for these Chewy Cherry-Almond Cookies

Who said that DSP has to be used for scrapbooking? I needed a container to give away some of my cookies that I wouldn't get back. So I used a piece of the Frostwood Lodge DSP to decorate an oatmeal container I had emptied making these wonderful Chewy Cherry-Almond Cookies. It turned out cute. So you say Yummmm, darn they look so good??? Well,  they are and I will even give you the recipe. It makes a 13x9 pan so there are plenty too! 



Here is the recipe:   Prep time 20 minutes    Oven 350    Bake 35 minutes
1 cup butter, softened
2 cups packed brown sugar
2 tsp baking powder
1 egg
1 tsp almond extract
2 cups all-purpose flour
2 cups regular rolled oats
1/2 cup sliced almonds
1 12 ounce jar cherry preserves (1 cup)

1. Preheat oven to 350. Line a 13x9x2-inch baking pan with foil,extending over edges of the pan. Grease foil; set pan aside.
2. In a large bowl, beat butter with an electric mixer on medium high speed for 30 seconds. Add brown sugar and baking powder. Beat until combined, scraping bowl occasionally. Beat in egg and almond extract until combined. Beat in as much of the flour as you can with the mixer. Using a wooden spoon,stir in remaining flour, the rolled oats, and almonds.  
3. Remove 1/2 cup of the dough and set aside. Press the remaining dough evenly into the bottom of the prepared baking pan. Spread with the preserves. Crumble the remaining dough evenly over preserves layer.
4. Bake in the preheated oven about 35 minutes or until lightly browned. Cool completely in pan on a wire rack. Cool completely in pan on a wire rack. Using the edges of the foil, lift the uncut cookies out of the pan. Cut into bars. Makes 36 bars. 
To Store: Place bars in an airtight container, cover. Store in the refrigerator for up to 3 days or freeze for up to 1 month.  Then put in a pretty container like above to give to your special friend!
